1 tbs oil
1 stalk celery
1 clove garlic
2 tsp coriander
2 tsp plain flour
2/3 cup water
1 tbs soy sauce/shoyu
125 ground cashew nuts
2 cups bread crumbs
2 tbs parsley
salt & pepper
wholemeal flour to coat
fry finely chopped onion, celery, garlic and mushrooms.
When cooked stir through coriander and flour.
Turn off the heat and add water and shoyu, cashew nuts and remaining ingredients.
Form the mixture into small balls or croquette shapes.
Shallow fry each side.
Serve with salad. They are lovely cold the next day.
