2 tbs olive oil
1 onion cut into wedges
1 carrot sliced diagonally
2 stalks celery cut diagonally into large pieces
2 cups broccoli florets
1/3 cup cashews
3 bok choy, thoroughly washed and green leaves sliced
Heat the oil in a wok.
Stir in onion, then carrot, garlic, celery and broccoli. Stir until cooked.
Stir in cashews and bok choy until bok choy wilts.
Add rice and stir until heated.
