This tastes almost as good as the meat version. It makes a very nice lasagne.
1 can lentils or 1 1/3 cups washed dried brown lentils
2 cans crushed tomatoes
3 cloves garlic
2 tsp dried parsley
2 tsp dried oregano
1 tsp dried basil
2 diced carrots
2 sliced celery stalks
Combine all ingredients in a sauce pan and simmer until the lentils are soft but not mushy.
