Nepalese red lentil soup

1 tsp coconut oil
1 onion
1 clove garlic
2 tsp ground cumin
2 tsp ground coriander
2 tsp tumeric
2 tbsp tomato paste
1.5 litres of water
1.5 cups of red lentils
3 carrots finely diced
2 tsp salt

Heat the oil and fry the onion and garlic until cooked
Add spices and tomato paste and stir for a few seconds
Add the liquid, carrots and lentils.
Cook until lentils and carrots are soft.
