Vegan almond date biccies

1 cup of dates
1 medium banana
2 tbsp almond/peanut butter
3/4 cup almond flour
3/4 cup oats
1/4 cup dried apricots/pecans/cacao nibs, chopped
Preheat the oven to 160 C
Cover the dates in water, and bring to the boil. Once water is boiling, turn off the heat.
Drain dates, and pulse them in the food processor.
Add banana and almond butter and mix until combined.
Add almond flour and oats and mix until combined.
Stir through your 1/4 cup of additions.
Place mixture in the fridge to chill for 20 minutes.
Form into 1 tbsp balls and flatten on the top.
Bake in a 160 C oven for about 15-20 minutes or until lightly browned. Biscuits will be soft in the centre.
