Potato and chickpea curry

6 potatoes, chopped and lightly steamed
1 onion finely chopped
1 knob ginger finely grated
3 heaped spoonfuls of curry paste
1 can chickpeas, drained
coriander to taste, chopped, including stems
3 spring onions
1 small can lite coconut milk

Fry the onion in a wok until soft.
Add ginger and curry paste and stir quickly
Add potatoes and chickpeas and stir to coat
Add coconut milk, coriander and spring onions
Cook until potatoes are soft.
