Lentil Pilaf

This is a staple in our house.
You will need:
1 tin lentils
1/2 cup uncooked rice
1 chopped onion
200g chopped pumpkin
1/4 cup olive oil
1/4 cup nice balsamic vinegar

Pour the lentils and rice into a saucepan and simmer gently.
Heat the olive oil in a small fry pan, and cook the onions and pumpkin for about 10 minutes.
Pour the onion mixture over the lentils. Do not stir, but continue to simmer for 10 minutes, or as long as the lentils are not too dry.
Turn off the heat, and stir through the balsamic vinegar.
Cover with a tea towel and leave to sit for 10 minutes.
Serve with rice and baby spinach.
Eat.
